Recipe: Gluten Free & Dairy Free Peanut Butter Protein Balls

              Hi everyone! Happy Tuesday! I hope you all have had a wonderful weekend. We had a busy weekend full of family fun and moving my brother in to his new apartment downtown Nashville. We had a great weekend, I hope you all had a great one as well.  Although it was heartbreaking to wake up to the tragedy that has happened in Las Vegas. My thoughts and prayers go out to those affected by this terrible crime.

               I  can't believe it is October, I feel like I say this every month when a new month arrives. It's crazy how fast this year has gone. What a great month this is; full of pumpkins, new fall recipes, festivals and so much more.  I wanted to share with you a new and improved recipe protein ball recipe that will make you want to eat 100 of these things. Think of a very  healthy reese cup! Yes I know, sounds amazing. Well they really are!


These protein balls are considered vegan also known as dairy free, they are also gluten free, and free of refined sugar. It makes eating a few of these, feel better knowing the ingredients are good.


Here is the recipe: 
Depending on how big of a batch you want to make, I made an extra large batch as I was taking them to co-workers. You can definitely take this recipe and cut it in half to make a smaller batch for your family if desired.

Large batch:
-2 jars of organic peanut butter
-1 bag of vegan chocolate chips 
-1 cup of flaxseed
-1 cup of chia seeds
-4 cups of gluten free oats 
-1 cup of blue agave nectar 
-2 tablespoon of organic vanilla 

(cut recipe in half if you would like a smaller batch)


Details: 
-Mix all ingredients together in large bowl
-line a baking pan with parchment paper
-use your hands or a cookie scoop to form balls 
-line the baking pan full of the protein balls
-place in fridge for at least 30 minutes to harden 
-eat and enjoy!
-I leave them in the fridge overnight and all day to keep them firm
